Thursday’s Recipe: Chocolate Chip Cake

If you couldn’t tell between this recipe and last week’s, I am most definitely a chocolate lover.  If it’s chocolate, chances are, I’ll probably love it.  This recipe happens to be one that I’ve been making for well over 10 years.  I started baking it when I used to babysit.  We’d be bored over the summer and spend lots of time baking.  When I ran across this recipe, it became a favorite, and I’ve made it countless times since.  We used to add icing to it, but it tends to be much too sweet (at least for my tastes).  It has also been well loved with icing, so I’ll leave that preference up to you.  It tastes really great with Funfetti icing.  So without further ado, here’s this yummy chocolate chip recipe:

Here’s what you need:

  • 2 c. flour
  • 1 2/3 c. sugar
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 1/4 c. sour cream
  • 3/4 c. margarine/butter, softened
  • 1 tsp. vanilla
  • 3 eggs
  • 1/2 c. sugar
  • 1 tsp. cinnamon
  • 1 6-oz. pkg. chocolate chips

Here’s what you do:

  • Preheat the oven to 350 degrees.
  • Grease a 13 x 9 pan.  (I use non-stick spray)
  • In a large bowl, combine the flour, baking powder baking soda, salt, sour cream, butter, vanilla, eggs, and the first 1 2/3 c. sugar.
  • Mix well by hand or use a mixer at medium speed for about 3 minutes.
  • Pour half of the batter into the pan.
  • In a separate, small bowl, combine the second 1/2 c. sugar and cinnamon until well mixed.
  • Sprinkle half of the cinnamon-sugar mixture and half of the chocolate chips (about 1/2 c.) over the batter in the pan.
  • Pour the remaining cake batter into the pan.

  • Sprinkle the remaining cinnamon-sugar mixture and chocolate chips on top.
  • Bake for 30-35 minutes or until toothpick inserted in center of cake comes out clean.
  • Top with icing or eat as is (best with a cold glass of milk!)
  • Enjoy!
